Man Muffins

Rob isn’t big on sweets, but I definitely love to bake – so I have also gotten good at putting together savory baked treats as well.  Stage right, Man Muffins. Muffins are usually fruity, but not these beauties.

Below are the simple steps, and photos, to making these crowd pleasers.   I usually serve them alongside chili or soup – but you can’t really go wrong with these.

Man Muffins AKA: Jalapeno & Cheddar Corn Muffins
Bake at 400 degrees for 15 minutes  Yield: 20 muffins

2 pkgs of Jiffy Corn Muffin mix <– Save yourself the trouble of measuring when you’re feeding large groups/appetites.
1 c. milk
2 eggs
1 can diced jalapenos
About 1/4 c. sharp cheddar cheese <– To be mixed into the batter.
More cheese for sprinkling

Throw all of the ingredients in together (except the cheddar that you are saving to sprinkle).

Fill the cups about halfway and sprinkle a healthy pinch on top.  I use a small cookie scoop to get the batter in the muffin cups, it’s not as messy as using a spoon. I do this so that I am sure that each one is equal, which makes sure that they all bake and finish together and so that you don’t have a muffin top spilling out. <– This must be where the term “muffin top” came from, yes?

Place them on the center rack at 400 degrees for about 15 minutes or until the cheese top is brown and gorgeous.  These Man Muffins are baking in a very manly set of camo paper cups.  Pretty cute, huh?

    • Sara – The boys will love them! I have a rockin’ chili recipe too that it easy easy. Do you still need a crock pot? I meant to ask you the other day. Just make sure to make a lot of muffins. And remember, Camo cake cups = bonus points. ;)

  1. Help!! How many ounces are the diced jalapeños supposed to be? The only ones they had at publix were pretty small. I’m Making this for thanksgiving

  2. I just made these to tonight and they are UNBELIEVABLELY Yummy! I did add more cheese (one full cup…cheese-o-holic yeah that’s me). My husband & I LUVVV these ‘Man Muffins’. Can’t wait to take them to work tomorrow as leftovers to share with my colleague whose making Chili tonight! THANK YOU SO MUCH FOR THIS RECIPE!
